Masa de Nixtamal
Masa Preparation:
To prepare your masa for making tortillas, tamales, and other masa creations, you must take it out of the fridge and let it sit for about 15-45 minutes before use, preferably covered. This will ensure your masa is at a workable temperature and will allow for kneading. Knead your masa by hand or place it in a stand mixer on low (~5 min). The masa should not be too sticky, but moldable.

Instructions for Handmade Tortillas:
Begin by preheating a comal (pan) to high heat. Using your hands grab enough masa to shape a ball of dough that is slightly larger than a bottle cap. Place the ball in the center of the plastic of your tortilla press and press to your desired thickness. Remove your tortilla from the plastic and lay it on your heated comal. Cook the first side for about 15 seconds or until the edges turn golden. Flip the tortilla and allow it to cook for about 35 seconds. Finally, flip your tortilla once more and cook until the tortilla starts to inflate.
